My Mission: Getting skinny for summer. DAY 1 PART 1 breakfast

I really need to get started on my diet. I want to lose 10lbs by July. So here it goes. I’ll be posting meals on what I’m eating and what motivates me. So here it goes.

DAY 1: Breakfast: Broccoli Spinach & Cheese Egg Casserole

I’m trying to stay gluten-free and Paleo friendly so I decided to make my own breakfast casserole after seeing some different recipes online

Low Carb Breakfast Casserole:

1 cup of spinach

3 cups of broccoli

8 eggs 

1/2 cup egg whites

3/4 cup of cheese of choice

1 tbsp of milk

Salt & Pepper

Preheat the oven at 375 F degrees. Spray a casserole dish with nonstick spray. Add spinach and cooked broccoli first. Then add cheese and milk. Next crack the eggs and beat them in a separate bowl. Add in the egg whites. Make sure mixture is even in the pan. Add salt and pepper to taste. Pour the mixture into the dish. Put the dish into the oven for 25 minutes. 

Take out and enjoy :) I cut this into 8 pieces and refrigerated. I have 2 pieces a day which is a little over 200 cals.

Everyone, go make roasted chickpeas. Right now.
1 can garbanzo beans + S/P + olive oil + cumin + cayenne pepper
(makes multiple servings)
Then roast @ 450 for 25-30 minutes.
They’re crunchy and filling, and full of protein!

“I read a study recently that compared groups of people that ate egg breakfasts vs groups of people that ate cereal or bagel-based breakfasts.  The results of the study showed that the egg eaters lost or maintained a healthier bodyweight, while the cereal/bagel eaters gained weight. It was hypothesized that the egg eaters actually ate less calories during the remainder of the day because their appetite was more satisfied compared to the cereal/bagel eaters who would have been more prone to wild blood sugar swings and food cravings.
But what about the extra calories in the yolks?

You’ll need a good sports bra, water on stand-by for after the work-out, a mat, and free weights. 

A series of 20 minute work-outs.  2 minute warm-up, three 6-minute circuits (3 min strength, 2 min cardio, 1 min abs), 2 min cool down.
